Paneer Butter Masala



Paneer - 200gms cubesor smaller pieces
Onion - 2
cashew nuts- 7-8 nos
Tomato puree- 1nos
Tomato ketchup/sauce - 2tbspn
Ginger -1 tspn
Garlic paste - 1 tspn
Butter - 3-4 tbspn
Oil - as required
Jeera - 1tspn
Green chilly - 1
red chilly powder - 1 tspn


Put some amount of oil in a hot pan & fry the onions. Fry it till it start turning brown. Grind onion & nuts & make a paste. Crush the jeera & green chilly & keep aside.
Now add 3-4 tablespoon of butter into the pan  & add the ginger , garlic, green chilly & Jeera paste - fry for sometime.Add the chilly powder & fry it for somemore time & add Tomato puree & sauce to this. Cook till oil starts appearing.
Now add the onion -cashew paste , required amount of salt n saute for 2 minutes. Then add the paneer cubes & cook this for 5 minutes in low flame in closed vessel.

Add more green chilly or chilly powder if you want it to be more spicy.... :)

Recipe for Idli & Dosa


White rice - 2 cups
Urad daal (Uzhunnu parippu) - 3/4 cup
Cooked brown rice - one handful

Soak White rice & Urad daal in water, separatly,  for 3hrs. Grind this in mixy until it makes a smooth paste. Don't add too much off water into the mixture. Now add cooked brown rice & grind it again , together. Add just enough water to make it a thick batter of pouring consistency.

Keep it outside for 8-10 hrs. Now u can see that flour raises a little. Now you add some salt n stir the flour & pour it in idli mould . You will get really soft idli's if  you use high quality urad daal.

You can have the idli with sambhar & coconut chutney.

You can even make dosa with this flour. It will be good, if you keep this flour in fridge & use after 1 day for making dosa.

Bread Pudding


Ingredients:

Bread - 5 pieces
Egg - 2
Milk - 2 cups
Sugar- 1 cup
Vanilla essence - 1/4 tspn
Cardamom powder - 1/4 tspn
Nuts  - 2 tbspn ( can also other dry fruits according to your interest)

Method:

Preheat the oven in convection mode at 180 degrees.

Beat the eggs well . Add all other ingredients together & mix it will hands. You can also use a wire whisk. But do not over beat it.

Pour it into a cake bowl & put that in oven for around 20 mtes . Check that in between with a toothpick.

Dont over bake it. This should be soft.

Now the delicious & mouth watering Bread pudding is ready!!!!!!!!!!!!!!!!!!!!!

Sambhar - kerala Style


Ingredients:

1.  Coconut oil - 2tbspn
     Onion - 1 big - finely sliced
     Assorted Vegetables - 3-4 cups - sliced cubes
     Turmeric powder - 1/2tbspn
     Salt
     Toor daal (Tuvara parippu) - 1/2 cup
     Water

2.  Asafoetida powder(kaayam) - a pinch

3.  Coconut oil - 2-3 tbspn
     mustard seeds
     Dried Red chilly - 2-3
     Fenugreek seeds (uluva) - a pinch
     Garlic - 6-7 slices
     Curry leaves
     Shallots - 4-5 finely sliced
     Red Chilly Powder - 2 tbspn
     Coriander powder - 1 tbspn
     Turmeric powder - 1/2 tbspn
     Sambar powder - 2 tbspn
     Asafoetida powder - a pinch


Method:


Pour 2 tbspn of coconut oil (section 1) into cooker. Fry the sliced onions till it become transparent. Add all the vegetables together . Mix them well.  Add water to cover the vegatables, along with other ingredients in section one & mix well. Cover cooker with lid & wait till 2 whistles.


Open the cooker once the pressure has gone fully. Add a pinch of Asafoetida into that n mix well (this will give a special flavor).


Now place a kadai in the stove  & add 2 tbspn of coconut oil . Splutter the mustard seeds. Then add dried red chilly, Fenugreek seeds, curry leaves, garlic, shallots. Once its fried  add all  masala powder in section 3 & fry for 2 minutes in low flame.

   
Add these masala mixture to the cooker n boil the sambhar for few minutes. Now delicious Kerala sambhar is  all set to  have with Brown rice (also with idli , dosa, white rice) !!!!!

Avial - Kerala Style


1. Assorted vegetables (potato, beans , raw banana, yam, drumstick, etc...)
    Onion - 1-2
    Green chilly - 1
    turmeric powder - 1/4 tbspn
    red chilly powder - 1/4 tbspn
    salt
2.  grated coconut - 3/4 cup
     Jeera -1/2tbspn
     Green chilly - 1
     turmeric powder - 1/4 tbspn
     red chilly powder - 1/4 tbspn(this will give a special taste to avial)
     salt
3.  coconut oil -2-3tbspn
      curry leaves -1 stem


   Cook all  the ingredients in section 1 together by mixing water, which is just needed to cook the vegetables.
  
    Grind all the section 2 items together.Add these to the cooked vegetable & mix well . Cook for another 2-3 minutes.

   Now switch of the stove & add 2 tbspn of coconut oil & curry leaves into this & close it with lid . Leave it for another 10 mtes. This will give a nice flavour for the avial.

  Now its ready to eat !!!!!
